I am working on a project where it would be beneficial to have a LED display to show available SSIDs. Is that possible? I'm not necessarily looking for a how-to right now, but a go / no go would be great. Thanks!

Yeah, should be possible.
I had a similar test setup working using lcd4linux and a MatrixOrbital (serial display with a TTL level shifter) connected to my ASUS WL-500g Premium.
