I'm mostly doing educated guesses here: The throughput will likely be low, and you will probably see random reboots when the router runs out of memory, even in normal usage scenarios.
I see images for AA up for this router so can I assume it is at least safe to test it without a serial console?
Yes.

Yes, there will be. I noticed the omission myself when I wanted to flash the beta on my RB493G.

Well, meanwhile i know that there are some issues with uclibc 0.9.33 and asterisk at mikrotik hw (http://forum.mikrotik.com/viewtopic.php?f=15&t=32187&start=100#p315601 & https://dev.openwrt.org/ticket/10974). Will there be a runing version in the future?
Probably. The nres is should be fixed in trunk, I think somebody just forgot to close the ticket. No idea about the issue mentioned in the mikrotik thread.

Unlikely.

that will sort themselves out?
Please do so. Unless you already have a patch, then please submit it directly, since Trac isn't really made for patch tracking.
We can't do any promises that they will be fixed for the release, but it always helps having them documented.
